Fish Provençal with Witzi’s Golden Granola

Ingredients:


• 8 oz fresh or frozen white fish
• 1 small fennel bulb
• 3 cups broth of choice
• 1 large onion finely diced or (if LowFODMAP, large slices)
• 1 cup yellow squash or zucchini, chopped
• 1 cup dry white wine
• 1 tsp grated orange peel
• 3 cloves garlic, minced or (if LowFODMAP, cut in quarters)
• 2 cups chopped tomatoes, or 1, 14oz can
• 1T thyme

Topping

• 1 Cup Witzi’s Golden Granola

Instructions:

  1. Thaw fish, if frozen. Rinse, pat dry, Cut into 1-inch pieces.

  2. Cut off stalks of fennel and thin slice from bottom – discard. Cut bulb in half and thinly slice.
    (For LowFODMAP, add 2T olive oil to a large pot. Once hot, add onion slices and garlic quarters. Saute until golden then remove with a slotted spoon and discard.

  3. In large pot, combine fennel, broth, onion, squash, wine, orange, and garlic.

  4. Bring to a boil. Reduce heat and simmer for 10 min.

  5. Stir in fish, tomatoes and thyme. Cook for 2-3min.

  6. Spoon into 4 bowls and sprinkle ¼ cup Witzi’s Golden Granola on top.
    Serve Pronto!
