Zucchini Noodles with Witzi’s Granola Pesto

Ingredients:

• 10 medium zucchini


• 2oz basil


• 1/2 cup Witzi’s Original Granola


• Protein powder


• 1/3 cup olive oil


• Juice from 1 lemon

• Handful of spinach

• Parmesan Cheese

• Grilled Chicken

Instructions:

  1. Spiralize zucchini and lay on paper towel (this will help prevent it from getting mushy)

  2. Saute zucchini with a little olive oil on medium high heat for about 5 minutes.

  3. Throw in spinach about the last minute (do not cover with lid when cooking).

  4. FOR PESTO: use food processor and combine: basil, olive oil, juice from lemon, Original Granola, protein powder and salt and pepper to your liking. Process while pausing a few times to scrape down sides until well combined and to the consistency of your liking.

  5. Add pesto to zucchini noodles after they have been cooked. Top with grilled chicken and a dash of Parmesan cheese.

  6. Serve Pronto!
