Zucchini Noodles with Witzi’s Granola Pesto
Ingredients:
• 10 medium zucchini
• 2oz basil
• 1/2 cup Witzi’s Original Granola
• Protein powder
• 1/3 cup olive oil
• Juice from 1 lemon
• Handful of spinach
• Parmesan Cheese
• Grilled Chicken
Instructions:
- Spiralize zucchini and lay on paper towel (this will help prevent it from getting mushy) 
- Saute zucchini with a little olive oil on medium high heat for about 5 minutes. 
- Throw in spinach about the last minute (do not cover with lid when cooking). 
- FOR PESTO: use food processor and combine: basil, olive oil, juice from lemon, Original Granola, protein powder and salt and pepper to your liking. Process while pausing a few times to scrape down sides until well combined and to the consistency of your liking. 
- Add pesto to zucchini noodles after they have been cooked. Top with grilled chicken and a dash of Parmesan cheese. 
- Serve Pronto!
